Deb's Lunch ... and Dinner and Breakfast too

It could be August

When I checked the weather this morning, there were thunderstorm warnings, and there’d been a good downpour and lighting and thunder in the night, too.

I went for a walk, and it could of been August. It was about 64°, misty and humid – I was too hot wearing a sweatshirt with 3/4 length sleeves and a t-shirt underneath, with light sweat pants.

The neighbors came over for brunch, and to see the kitty routine, since they’re going to be our next kitty minders. I made Mark’s mom’s sour cream waffles, and bacon and put out yogurt and homemade granola for parfaits, with some rhubarb sauce and applesauce. I used the immersion blender to smooth out both sauces. Yum.

This is at the end of a very long week – I’m still fighting a cold and in fact feel like I might’ve gotten a new one on the tail end of the first one. Belana was out sick on Wednesday and Thursday, and Rach made a last minute trip to Whole Foods for cold prevention stuff on her way out the door.

Monday I made a real dinner, like I said. Tuesday I went to a reception on campus, where the food disappeared astoundingly fast. I grabbed a few of the signature sweet sour cocktail meatballs – cherry sauce instead of the more common cranberry – and some chips – the best-tasting item. I tried one of the mini cheesecakes even though I saw half of one abandoned on a table. I abandoned more than half of mine, too – they were supposed to be flavors, chocolate, lemon, raspberry – but were virtually tasteless and the consistency was nothing appealing, either. I ate some of the rice and the last of the green beans from Monday when I got home. Belana was feeling too sick for dinner, and Rach went out.

Wednesday I worked a backwards day, got to work at noon and stayed until 9:00, after back-to-back online meetings. I didn’t eat anything remarkable – the best story of the day was the bus ride home. Right before I got off, a guy sitting all the way at the back came up to my seat and asked, “is it just me, or is this driver ….?” And I said, “yep, he’s really slamming it around. I’m getting seasick.”

Thursday I worked at home and taught a cooking class in the evening. Before I left for class, I made a gratin with the last carton of frozen kale from last year, hot pepper cheese, veggie broth, a little cream, and a potato – it was a version of Laurie Colwin’s creamed spinach. I also left some squash roasting in the oven. Cooking class was fun, but only 3 kids showed.

Friday I made pasta with sausages & peppers. I made some cooked brats from the freezer think they were Italian sausages by cooking them with rosemary and fennel seed and peppers and onions and tomato puree, home made, that was pretty watery, but cooked down nicely and made the sausage tender. Would’ve been a good dinner if I hadn’t camped out on the couch and kept sneaking candy – first fruity gumdrops from the co-op, then chocolate.

Saturday we had grilled sandwiches, ham or turkey, with cheddar cheese and a kind of thousand island made from chili sauce &  mayonnaise with the leftover squash from Thursday with a cilantro vinaigrette, and a big salad, on the side.

Tonight I’m having chips and chocolate pot de creme by my computer in front of TV, for a little Sunday supper after the big brunch.
