Granola

10 cups dry ingredients - at least 7 cups rolled oats, and the rest coconut, sesame or sunflower seeds, nuts, wheat germ
1/4 cup each honey and mild flavored oil (canola, safflower, etc.)
3 cups dried fruit - raisins, dates, apricots (I like the all-natural fruitcake blend from King Arthur Flour)

Measure the dry ingredients into a large bowl. Heat the oil and honey for a few seconds in a microwave, or over low heat, just until very liquid-y. Pour over the oats, etc., and toss together - hands are best for this. Spread the mixture onto two large baking sheets, and toast at 325° for 45 minutes to 1 hour, stirring every 15 minutes. Mix in the dried fruit while it is still warmish, because this seems to plump up and separate the fruit.
