During class we’ll make a roasted vegetable salad, and taste Mac & Cheese made with and without acorn squash replacing some of the cheese sauce.
Veggie list for October 13:
Beauty heart radish
This week, we’re going to make a squash soup. We’ll eat it topped with cinnamon toast croutons and other toppings. I love this recipe because it makes it’s own broth, because you steam the squash over the seeds and scrapings from the squash, and some shallots, that you’ve browned in butter, and added water.
We’ll also make a roasted vegetable salad, with roasted broccoli and potato and carrots served on a bed of lettuce and beauty heart radish.
