Tuesday this week I taught my third cooking class at Orange Tree Imports. I think this one was the most fun yet. The theme was vegetable side dishes “easy enough for everyday, fancy enough for Thanksgiving”.

Potato Poblano Gratin, pretty much the Gourmet recipe as is. I demoed making the rajas, strips of roasted poblano and fried onions. I have a Rick Bayless cookbook where he calls them “essential rajas”, and I can’t help but think of them as essential rajas whenever I make them. But nobody seems to think that’s as funny as I do.
