Here's the deal on the goat cheese. Use the soft kind that comes in a tube.
Two tubes will serve around 8 people.
Chop fresh or Muir Organic canned tomatoes....Two large cans. Lightly saute
two or three cloves of garlic in some olive oil...after the garlic is soft
add the tomatoes, and around two or three pinches of hot red pepper flakes,
sm. handful of chopped fresh basil, only a pinch of oregano, and salt and
pepper. Cook for around 10 minutes. Put in a baking dish and place the
tubes of cheese in the middle (make an ice cream scoop mound of the cheese)
Drizzle all with virgin olive oil and bake for 20 minutes at 350 or until
bubbly. Sprinkle a handful of fresh cut basil on top of the cheese and
serve hot with good Italian bread. Enjoy!
Have a new Goat cheese recipe! (good for 4 people)
Get one of those orange zesters. They have 5 holes or so and score
down an orange till all the skin is off. Cut the orange and
squeeze on the log. Let sit for a few minutes, then drizzle lots
of extra virgin olive oil. Tip dish and spoon the olive and orange
juice on log. Really drenching it. Now grind some red and black
pepper over all.
Slice a 1/4 cup of kalamata olives. Sprinkle over log and top with
orange peels. Let sit for 2 or 3 hours at room temp before serving.
Excellent on warm Italian bread.
