{"id":505,"date":"2021-09-18T20:25:14","date_gmt":"2021-09-18T20:25:14","guid":{"rendered":"https:\/\/debslunch.com\/new-recipes\/?p=505"},"modified":"2021-09-18T20:25:14","modified_gmt":"2021-09-18T20:25:14","slug":"stovetop-mac-cheese-with-kale","status":"publish","type":"post","link":"https:\/\/debslunch.com\/new-recipes\/stovetop-mac-cheese-with-kale\/","title":{"rendered":"Stovetop Mac &#038; Cheese with Kale"},"content":{"rendered":"<figure style=\"width: 650px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large\" src=\"https:\/\/debslunch.com\/stovetopmaccheesekale.jpg\" alt=\"Stovetop mac &amp; cheese with kale\" width=\"650\" height=\"583\" \/><figcaption class=\"wp-caption-text\"><em>Photo by <a href=\"https:\/\/www.foodandwine.com\/recipes\/easy-stovetop-kale-mac-and-cheese\">Todd Porter &amp; Diane Cu<\/a><\/em><\/figcaption><\/figure>\n<p>Serves 6-8<br \/>\nTakes about 20 minutes<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n1 bunch of kale, rinsed, and large stems removed<br \/>\n1 tablespoon olive oil<br \/>\n1 clove garlic, minced or put through a press (optional)<br \/>\ngood pinch of kosher salt<br \/>\nfreshly ground black pepper<br \/>\n2 tablespoons butter<br \/>\n2 tablespoons flour<br \/>\n1 3\/4 cups warm water<br \/>\n3 cups milk, warmed<br \/>\n1 pound macaroni or pasta of your choice<br \/>\nanother good pinch of kosher salt<br \/>\n3 cups shredded cheese \u2013 again your choice \u2013 when I tested this recipe I used white cheddar, Swiss, a kind of spicey smoked cheddar with a bit of chipotle, and Parmesan<br \/>\nAdditional salt &amp; pepper to taste, and you can play around with the seasoning \u2013 I often put in a bit of nutmeg, and dry or prepared mustard, and some hot seasonings like cayenne would not be out of place<\/p>\n<p>Bring a large pot of water to a boil, and when it&#8217;s boiling, submerge the kale and cook until softened, about 5 minutes. Pour into a colander and rinse with cold water to cool it, and then squeeze the water out of the kale by handfuls, transferring it to a cutting board, where you will chop it into bite size pieces.<\/p>\n<p>Heat the olive oil in a skillet large enough to hold the kale, and saut\u00e9, adding the salt and pepper and optional garlic, until it&#8217;s looking a softened and browned, about 10 minutes.<\/p>\n<p>Melt the butter in a heavy bottomed pot &#8211; could be the same one you used for the kale, and add the flour. Blend, then whisk in the warm water and the milk. Add the dry pasta and the 2nd pinch of salt. Bring to a simmer, then partially cover and cook for 10-15 minutes until the pasta is cooked and liquid is mostly absorbed. Uncover and add the grated cheese, kale, and any additional seasonings.
