So the first Sunday we were back, we had <a href=\"https:\/\/www.debslunch.com\/blog\/wp-content\/uploads\/2020\/10\/lastpancake.jpg\">cherry pancakes<\/a> at home. Which left me with about a cup of thawed-out pie cherries, and these muffins are the result. Not a replacement for my <a href=\"https:\/\/debslunch.com\/debslunchblog\/recipes\/better-then-stellas-cherry-muffins\/\">Better-Than-Stella&#8217;s-Cherry-Muffins<\/a>, simply an alternative.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-284\" src=\"https:\/\/debslunch.com\/new-recipes\/wp-content\/uploads\/2020\/10\/fancycherrymuffins.jpg\" alt=\"\" width=\"582\" height=\"650\" srcset=\"https:\/\/debslunch.com\/new-recipes\/wp-content\/uploads\/2020\/10\/fancycherrymuffins.jpg 582w, https:\/\/debslunch.com\/new-recipes\/wp-content\/uploads\/2020\/10\/fancycherrymuffins-269x300.jpg 269w\" sizes=\"auto, (max-width: 582px) 100vw, 582px\" \/><\/p>\n<p><em>Makes about 13 muffins<\/em><\/p>\n<p>2 1\/2 cups unbleached flour (feel free to sub in other types, gluten free, etc.)<br \/>\n1\/2 cup grated almond paste<br \/>\n2 teaspoons baking powder<br \/>\n1 teaspoon baking soda<br \/>\n1\/2 teaspoon salt<br \/>\n1\/2 cup sugar<br \/>\n2 eggs<br \/>\n1 cup milk<br \/>\n1\/3 cup sour cream<br \/>\n5 tablespoons coconut oil (again, feel free to sub in other types, melted butter, vegetable oil, etc.)<br \/>\n1 teaspoon vanilla extract<br \/>\n1\/2 teaspoon almond extract<br \/>\n1\/2 cup <a href=\"https:\/\/shop.kingarthurbaking.com\/items\/cherry-jammy-bits-8-oz\">King Arthur cherry jammy bits<\/a>, or dried cherries<br \/>\n1 scant cup tart cherries, thawed and well-drained if frozen, well-drained if jarred<\/p>\n<p>sliced almonds and granulated sugar for sprinkling on top<\/p>\n<p>Heat the oven to 375\u00b0, and line the wells of a 12-cup muffin pan with paper liners, or grease them. You may need a custard cup or other container to make muffin #13,<\/p>\n<p>Place the flour in a large mixing bowl. Add the grated almond paste, and toss, and then add the baking powder, baking soda, salt, and sugar, and toss again. Make a well in the center, and add the eggs, milk, sour cream, and extracts. Mix, but only until all the dry ingredients are moistened &#8211; the batter will still be quite lumpy &#8211; then fold in the bits or dried cherries, and tart cherries.<\/p>\n<p>Portion the batter into the pan(s) &#8211; a muffin scoop is helpful here &#8211; and sprinkle the almonds and sugar on top.
