Mostly I was on a tear to use up anything that wouldn’t keep while we’re at TIFF, and get all CSA veggies processed.
On Friday I was going to make pizza, and I left some pizza dough rising in the fridge before I left for work. As it turned out Mark didn’t get back from Chicago until after 9:00 p.m. so I blanched and diced tomatoes, cut corn off the cob to freeze, and made pesto, and ate curried corn over greens on my own.
Saturday night we went to see Once Upon A Time in Hollywood, and for dinner after we ate brats, broiled inside, because no driveway or backyard to grill in, and corn on the cob. And a kind of Caprese salad made with cotija cheese instead of mozzarella because that’s what I had. The movie was as good as my popular culture maven son, Al, said it would be.
Sunday morning I made the pizza crust into roasted vegetable pizza, that we ate with scrambled eggs with cream.
I went for a before-breakfast walk, took pictures of flowers and fruits, and hung out out behind the coffee place for a bit.
Sunday night we ate pasta pesto and salad and garlic knots made with garlic scape butter and the last of the pizza crust. I chopped up the tomatoes and cheese from the night before’s Caprese, and added more vinegar & Balsamic vinegar, to eat on either salad or pasta. The garlic knots were tasty while they were hot, but kind of disappointing after they cooled off.
Monday morning I made the furry peaches into peach muffins, worked setting up my two online courses, and then biked over to Goodman to prep pantry meal. The menu was boneless porkchops with apple-pear compote, roasted green beans & potatoes vinaigrette, buttered noodles with broccoli and toasted breadcrumbs on top, and banana bread pudding with caramel sauce. And I donated the yellow Tipi watermelon I got in my last box.
The peach muffins were another food that was delicious fresh, and not as good the next day. They tasted a lot better than the garlic knots on day 2, though!
We had breakfast for dinner when I got home, bacon, eggs, scrambled with the last of the Caprese topping, toast, and roasted potatoes. Jones Valley has been selling these pinto potatoes that are really cute, and delicious.
