Preheat the oven to 350 degrees. Grease and flour a bundt or tube pan, or two bread pans. Melt the butter in a large microwave safe bowl (if you have a microwave, otherwise just do it on the stove), add the instant coffee and brown sugar, and stir to dissolve. Mix in the eggs, stirring until smooth after each. Mash the bananas in another bowl and add the orange juice and cold coffee. Add the baking powder and soda, salt, and spices to the butter and egg mixture. Stir in the flour add the bananas and liquids, and fold in the nuts. Transfer the mixture to the prepared pans and bake for 45 minutes to one hour.
